In the heart of Old Delhi, just a stone's throw from the grand Jama Masjid, lies Ballimaran—a neighborhood immortalized by the poetry of Mirza Ghalib and the scents of ancient cauldrons.
During the late Mughal era, royal hakims (physicians) and khansamas (head chefs) formulated Nihari (derived from the Arabic Nahar, meaning morning) as a potent, restorative dawn stew for royal troops and nobles fighting the bitter northern winter winds.
The recipe required sealing large hand-beaten copper deghs with dough at dusk and simmering them all night long until the bone marrow dissolved into a silky, fragrant gravy that warmed the body and stirred the soul.
Setting the Degh on Anupshahr Road
For decades, food lovers, professors, and university students in Aligarh would travel all the way to Delhi’s Jama Masjid just for a plate of genuine Ballimaran Nihari.
